Vegan Tacos Al Pastor
INGREDIENTS
1 8 oz Package, Simply Organic Simmer Sauce, Southwest Taco
1 Lime
1 Cup Hot Water
1 Cup Texturized Vegetable Protein (TVP)
1 Small Yellow Onion, Finely Diced
1 oz Taco Seasoning
1-2 Tablespoon Hot Sauce
1 8 oz Can, Pineapple Chunks (drained and liquid reserved)
1 Tablespoon Agave Syrup
1 Tablespoon Light Brown Sugar
2 Tablespoon Olive Oil, divided
Garish
1 White Onion, Finely Minced
1 Bunch Cilantro, Finely Chopped
1 Lime

INSTRUCTIONS
1. Rehydrate TVP by pouring 1 cup of hot water over the TVP and mixing. Set aside until all the liquid has been absorbed. Squeeze out any extra liquid.
2. In a large mixing bowl, add the TVP, juice from 1 lime, and taco simmer sauce. Let marinate for at least 30 minutes.
3. When done marinating, drain any excess marinade from the TVP.
4. In a medium skillet, heat 1 tablespoon of olive oil over medium high heat. Add yellow onion and sauté until the onion is soft. Add marinated TVP, taco seasoning, and hot sauce. Stir to combine and cook until TVP is slightly crispy.
5. In a separate small skillet, heat 1 tablespoon of olive oil over medium high heat. Add drained pineapple and sauté until lightly golden. Add brown sugar and agave syrup and stir to combine. Remove from heat.
6. Warm tortillas and build tacos by adding TVP, white onion, cilantro, and top with warm pineapple. Serve with a wedge of lime.
